1. Broccoli, Asparagus and Green beans salad


  • A cup of French beans, trimmed
  • A cup of broccoli, stemmed
  • Cup of asparagus, trimmed
  • 1 tsp Ground black pepper
  • Garlic - 5 pods, crushed - optional
  • Salt to taste
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Cilantro or mint leaves - a few sprigs –optional

How to prepare?

Cut and wash the veggies. Boil water in a large pot and add salt to it. First, add French beans, cook for about 2 minutes and take them out using a slotted spatula. Then add asparagus and cook for about 2 minutes and finally add broccoli and cook for about 3 mins. In order to stop the cooking process, immerse it in a bowl of cold water. Drain the water using sieve.

This can be prepared in two ways: Heat a pan, add olive oil, sauté crushed garlic and the veggies, add salt and pepper and occasionally toss them for about 3 to 4 minutes and finally add lemon juice.

Alternatively, it can be taken as a cold salad, by adding the veggies in a large bowl, add salt, pepper, olive oil and toss well. Finish it with lemon juice and cilantro/mint leaves. Adding garlic is optional.

2. Berry Salad


  • Blueberries - 10
  • Strawberries - 10
  • Raspberries - 10
  • Black berries - 10
  • Mint leaves a few sprigs - optional
  • 2 tbsp orange juice
  • 2 tbsp caster sugar

How to prepare?

Wash, trim and cut berries. Take a large bowl, add all berries together and toss well. Sprinkle with orange juice and sugar. Adding mint leaves is optional.

3. Mushroom Soup


  • 1 ½ cups of mushroom
  • ½ cup of onion - chopped
  • 1 tbsp olive oil or low fat butter
  • Salt to taste
  • Pepper to taste
  • ¼ cup Low fat milk
  • 3 cups of hot water

How to Prepare?

Heat a non stick pan and add olive oil or butter. Sauté onions and mushrooms for about 2 minutes over a medium flame. Now add the hot water and cook for 7 minutes or until mushroom is well cooked. Once the mixture is cooled off, put them in a blender and make a puree. Heat the pan, add the blended mixture and milk and once it comes off to a boil, add salt and pepper.
