This cottage cheese vegetable lasagne recipe is made using pumpkin, tomato pasta sauce, spinach leaves, crushed garlic and cottage cheese. Serves: This Recipe Serves 6-8. Ingredients: 1. Six Fresh Lasagne sheets 2. 500g Pumpkin, peeled & sliced 3. 800g Pre prepared Tomato Pasta sauce 4. One tablespoon Olive Oil 5. Two Cloves Garlic, crushed 6. 300g Spinach leaves, washed & chopped 7. One Tub of Bulla Original Cottage Cheese 8. One tsp Tuscan seasoning 9. Three Eggs 10. One cup Parmesan Cheese, grated Method of Preparation: 1. Pre-heat oven to 170 degrees C. 2. Place the sliced pumpkin into a large saucepan with the tomato pasta sauce and simmer over a low heat for ten minutes. 3. Heat the olive oil in a frying pan over a medium heat and sauté the garlic 1 min, add the spinach leaves to the pan and cook stirring until spinach is wilted. Remove from the heat and cool. 4. Combine the cottage cheese, seasoning, eggs and 1/2 the parmesan cheese in a large bowl and mix well finally fold through the wilted spinach. 5. Spoon half the pumpkin mixture into the base of a deep 24 cm square baking dish, cover with a layer of pasta sheets, top with half the cottage cheese mixture, cover with a layer pasta sheets and top with remaining pumpkin mixture repeat with remaining pasta, finishing with the cottage cheese and spinach mixture. 6. Sprinkle over the Parmesan cheese and bake uncovered in the pre-heated oven 180c for 30 minutes until golden. 7. Serve hot with salad and crusty bread. Fish Chowder Recipe Salmon is high in protein and helps in weight reduction. This fish chowder recipe combines the goodness of salmon with celery, rice and vegetable stock. This healthy, low fat fish chowder is very delicious and easy to prepare. Serves: This Recipe Serves 4. Ingredients: 1. 600g Tasmanian salmon fillet, bones and skin removed 2. One stick celery, chopped 3. Two medium carrots, chopped 4. One cup cooked rice 5. One litre vegetable stock 6. One teaspoon Lemon pepper 7. Salt and pepper to taste Method of Preparation: 1. Place all ingredients into heavy based pot. 2. Simmer over low heat for one hour, or until vegetables are softened. 3. Place all ingredients in food processor and process lightly. 4. Add salt and pepper to taste. 5. Serve immediately. Grilled Vegetable Stack Recipe Grilled vegetable stack combines the goodness and taste of grilled pumpkin, tomatoes, balsamic vinegar, baby spinach and fresh crusty bread. It is a very quick and easy light meal. You can also use any other vegetables in the stack including capsicum or zucchini as they tend to grill very well also. Serves: This Recipe Serves 4. Ingredients: 1. 200g pumpkin, peeled and sliced into 1cm wedges. 2. One tablespoon olive oil 3. Four tomatoes, sliced thickly 4. 70g baby spinach leaves 5. Balsamic vinegar, to drizzle 6. Crusty bread to serve Method of Preparation: 1. Heat large griddle plate or pan over high heat, brush with olive oil and place pumpkin on top. 2. Turn the grill down to medium heat and cook pumpkin for about 3-4 minutes or until golden brown Take pumpkin off and set aside. Grill the tomatoes each side until golden brown. 3. Heat small pan over medium heat, add the spinach leaves and sauté until they have wilted slightly. Place spinach leaves on the plate and stack vegetables on top. 4.
