Ingredients: 1. Two Cups plain flour 2. Four tablespoons reduced fat margarine, melted 3. One tablespoon baking powder 4. 150ml reduced fat milk 5. One large granny smith apple, peeled, cored and finely diced 6. One egg, beaten 7. One tablespoon brown sugar 8. 1/4 teaspoon ground cinnamon 9. 3/4 cup blueberries (fresh or frozen) Method of Preparation: 1. Preheat oven to 180 degrees (160 degrees fan forced). Lightly grease a 12 hole muffin pan. 2. Sift flour and baking powder into bowl. Mix together melted butter, milk and egg until well combined. 3. Place chopped apple, brown sugar and cinnamon in with the flour mixture. Pour in the milk mixture and stir until just combined. 4. Add the blueberries and properly mix in. 5. Place in preheated oven and cook for 10 minutes. 6. Let stand for 2 minutes then take out of tin. 7. Serve immediately with flavored fruit yoghurt and extra berries if desired. Bran Cereal with Mixed Fruit and Yogurt Recipe Bran is good for weight loss as it make you feel full longer and therefore limit calorie intake throughout the day. Bran cereal with mixed fruit and yogurt combines the goodness of bran cereal with mixed fruits and yogurt which both add flavor and beneficial nutrients. Serves: This Recipe Serves 1. Ingredients: 1. One kiwi fruit, peeled and chopped 2. One small apple, chopped 3. Half cup low fat yogurt of choice 4. One small mandarin, peeled and segmented 5. One cup Bran cereal of your choice Method of Preparation: 1. Mix together fruit and yogurt. 2. Place cereal in bowl and fruit on top. 3. Mix cereal and fruit together, if desired. Cantaloupe Fruit Cup Fruit salads are a good choice if you want to restrict your calorie intake. They are healthier, delicious and present an interesting and fun way to serve and eat. Any other fruit can be added to the cup such as berries (in season). Serve the cup drizzled with any style of low fat yoghurt if desired. Serves: This Recipe Serves 4. Ingredients: 1. One cantaloupe, ends cut off and peeled 2. One cup green grapes 3. One cup red grapes 4. Half cup diced watermelon 5. Small tub of low-fat yoghurt (optional) Method of Preparation: 1. Place cantaloupe piece on plate, scoop out small piece from the centre so that the fruit can sit on top. 2. Arrange grapes and watermelon on top. 3. Serve with yoghurt if desired. Corn and Ham Muffins Lean ham is a rich source of protein and corn is high in Vitamin B, folate and fiber and other beneficial nutrients. Corn and ham muffins are delicious and can be served with chutney. Serves: This Recipe makes 6 muffins. Ingredients: 1. Two cups plain flour 2. One egg 3. 250mls low fat milk 4. Half cup corn kernels, well drained 5. Three slices (50g) ham, finely diced 6. Two tablespoons olive oil 7. One teaspoon baking powder 8. 1/4 red capsicum, finely chopped 9. Two teaspoons finely chopped chives Method of Preparation: 1. Preheat oven to 180 degrees (160 degrees fan forced). 2. Sift flour and baking powder into large bowl. Mix egg, milk and oil together. 3. Place wet ingredients along with corn, ham, capsicum and chives into the flour, and fold in very carefully. 4. Spoon mixture into a greased 6 hole muffin tin. 5.
