Healthy Soup Recipes


A fat loss diet should not be such that it makes you starve or deprive you from the essential nutrients that you body require for proper functioning of the body or fighting against diseases. A healthy soup is a smarter choice if you want to restrict your calorie intake in order to burn your excess body fat.

Soups made from vegetables and fruits are rich in vitamins, minerals and other vital components that are highly beneficial for good health. They make you feel full sooner and reduce the temptation to eat carbohydrate foods. They are easy to make and can be taken as a healthy snacks between the two meals or before taking meals. They play a great role in a healthy fat loss diet. Here are some healthy soup recipes:

Healthy Low Calorie Soup Recipes

Pear and Parsnip Soup Recipe

Pear and parsnip soup is a low fat soup that you can easily serve with your favorite wholemeal or whole-grained bread. It makes a great winter warmer and helps in your weight loss.

Serves: This Recipe Serves 4.

Ingredients:

1. Four ripe pears, cored, peeled and chopped
2. Three large parsnips, peeled and roughly chopped
3. One leek, washed and finely chopped
4. 750ml vegetable stock

Method of Preparation:

1. Take pears, parsnips, leek and vegetable stock in a large pot.

2. Cook over low heat for approximately 30 minutes, or until all vegetables are soft.

3. Blend soup using stick blender or in food processor until smooth.

4. Garnish with low-fat sour cream if desired.

Butternut Pumpkin Soup Recipe

Butter pumpkin soup is a sweet winter warmer that you can serve to your family and friends. For richer flavor, roast the butternut pumpkin before using it in the soup. You can also roast some brown onions at the same time you are roasting the pumpkin and add it to the soup as well.

Serves: This Recipe Serves 4.

Ingredients:

1. One small-medium butternut pumpkin (approx. 1kg)
2. Olive oil
3. 750ml vegetable stock
4. Salt and pepper to taste

Method of Preparation:

1. Preheat oven to 180 degrees (160 degrees fan forced).

2. Peel pumpkin, remove seeds and cut up into large pieces for roasting.

3. Drizzle lightly with olive oil and season pumpkin well with salt and pepper.

4. Cook for 45 minutes or until pumpkin is soft and golden brown.

5. Place roasted pumpkin in large saucepan, add vegetable stock and simmer for about 10 minutes.

6. Puree soup in food processor until smooth.

7. Serve immediately with you favorite bread.

Potato and Leek Soup Recipe

Leeks contain many beneficial compounds that are good for health. The potato and leek soup makes a healthy winter dinner and can be eaten as a healthy low-fat snack. It can be served with parsley, a small dab of light sour cream, wholemeal or crusty bread.

Serves: This Recipe Serves 4.

Ingredients:

1. One large leek, washed thoroughly and chopped finely
2. Three tablespoons light sour cream
3. Three Cups (750ml) vegetable stock
4. 600g Coliban potatoes, peeled and diced
5. One tablespoon olive oil
6. 1/4 cup finely diced flat leaf parsley

Method of Preparation:

1. Heat olive oil in large saucepan. Add the leek and lightly brown. Add the potatoes to the leek and cook over low heat for around 30 minutes, stirring occasionally.

2. Add the vegetable stock; mix in with the leek and potatoes until well combined.

3. Simmer, stirring occasionally for about 30 minutes or until the soup has thickened.

4. Place soup in a food processor and process until smooth, or using a stick blender, blend the soup in the pot, being careful not to touch the bottom of the saucepan.

5. Add the sour cream if desired and mix into the soup. Add the parsley and stir to combine. Spoon soups into bowls and serve immediately with crusty bread.
